Beef Short Ribs have a great beefy steak flavor and are relatively inexpensive. Most people think they need to be braised or slow cooked to render any fat because they can be tough but they are great right on the grill, too.
Just like any steak, generously season the pieces on all sides with salt and pepper a couple of hours before grilling them. In my case I used my CK Almost Famous BBQ Rub as the seasoning. Before cooking bring the meat to room temperature and then put them on a medium high grill, bone side down first to get some char which takes about 3-4 minutes. Then do the same to all the other sides and cook them to the temperature you like – for medium rare it is about 135 dg.
When done, remove them from the grill and let them rest for at least 5 minutes, if not more.

Choose whatever vegetable you prefer and put them on a sheet pan. Sprinkle with Avocado Oil and Sea Salt. Roast until a little browned and remove from the oven. The toaster oven works great in the summer which is what she used.
Cook the farro according to package directions. Place the farro at the bottom, arrange your vegetables and enjoy!
She uses the leftover vegetables in her loaded salad. With that she adds corn, peas, tomato and avocado!
