Ranchero Sauce


1 Spanish Onions – quartered

6 cups water

2 large garlic cloves – mashed

2 dried New Mexico Chiles – seeded

2 Serrano Chiles – diced

½ green pepper – cubed

½ red pepper – cubed

¼ cup Cilantro

2 small bay leaves

10 Roma tomatoes – diced

Pepper – to taste

Salt – to taste


Put water in 3 quart saucepan – add all other ingredients – bring to a boil – reduce heat to a low boil or a high simmer, cover partially and simmer until reduced by a third.

Put mixture into a food processor until well blended.
