Shrimp and Grits

It was nice to have a night off from work so I could do some cooking for a change.  All day I had a hankerin’ for Shrimp and Grits, which is one of my favorite dishes. I went to the store and got shrimp and bacon for a new recipe I wanted to try.  Because we are trying to eat mostly clean food we rarely have bacon in the house anymore.

So I get home ready to try this recipe and my wife tells me she wants to have Zoodles (noodles made from a zucchini) instead.  I was slightly disappointed but know they are very healthy and went ahead and made a stir fry for her using the shrimp I had just purchased and the Zoodles.

Stir fries are very easy and quick to make as long has you have all of your ingredients ready to go before you start cooking.   I grabbed some broccoli from the fridge, added julienned carrots and added red onion slices to the mixture.  For a healthy and deep taste I also sliced up some mushrooms.

First thing I did was add some minced garlic to some peanut oil in my wok.  Peanut oil has a high smoke point which means it can take a lot of heat and also has great flavor.

I seasoned the shrimp with salt and pepper added them to pan after the oil had been flavored with the garlic and cooked them until they were slightly pink and almost cooked through.  Then I removed them to be added later.

Using the same garlic flavored oil I added the mushrooms to sauté and release the water in them.

Like I said, stir fries are easy to make.  Using medium high heat I added the vegetable mixture and a little water so the vegetables would steam.  When they were ready I added a few shots of soy sauce, a shot of sesame oil and a good squirt of Sriracha sauce for a little heat.

I waited to add the Zoodles until the very end because I wanted to keep them slightly crunchy and not end up like soggy squash.

To finish I added the shrimp back in and cooked them until they were completely cooked through.  This very tasty and healthy dish took only about 15 to 20 minutes to make from start to finish.

Because I was really in a mood to cook I went ahead and made the Shrimp and Grits for myself.  To be honest the new recipe I was trying was not very good and did not quench my hankerin’ for the dish I had been looking forward to all day, however, there will always be a next time to get it right.
